For over 15 years, Akshay has worked closely with crofters, fishermen, butchers, and producers, creating dishes that celebrate the islands’ freshest seasonal ingredients. From his own no-dig kitchen garden to the wild and foraged, every ingredient tells a story. Signature dishes, like Goan seafood curry with freshly baked Shetland bannocks, bring together heritage and innovation in every bite.

Sustainability and reducing food miles guide everything Akshay does. Alongside private dining, he hosts Croft to Coast pop-up kitchens in community halls and Croft to Kitchen farm-to-table experiences at local crofts. Beyond cooking, he shares recipes and island life on social media and YouTube, with features in newspapers, magazines, and television.
